How many microphones can I plug into the PTL-600?

Four, on the separate XLR/LINE channels, each with its own +48V phantom power switch so you can mix dynamic and condenser microphones on the same desk. There is also a stereo L/R TRS pair and Bluetooth, which is what most churches, halls and small venues use for backing tracks or background playlists.

What is the SUB output for?

It carries a low-frequency-only feed, so you can run a powered subwoofer from it without giving up a main output or splitting cables. Alongside it you get main L and R XLR outputs, two AUX sends switchable pre or post fader for foldback or in-ear monitors, and a BUS output that works well as a separate feed for a live stream or an overflow room.

Should I choose the PTL-600 or the PTL-800?

Count your microphones. The PTL-600 has four XLR/LINE channels, the PTL-800 has six. Everything else matches: 16 DSP effects, SEND/RETURN for an external processor, two AUX plus BUS and SUB outputs, Bluetooth and two stereo headphone outputs. If you are already close to the limit, the extra two channels on the PTL-800 cost less than replacing the desk later.
